Made fresh each morning
Dough is made in the morning, rolled before service, cooked to order. Portions are the size we'd serve at home, not the size we'd photograph for a magazine.

Tagliatelle with beef shin
$32A long braise with rosemary and red wine. The shin falls apart into the sauce; the pasta catches it.

$36Half a Mary's chicken pressed under a brick on the grill. Salsa verde, charred lemon, a single bay leaf you should not eat but might admire.

Bistecca Grilled ribeye for two
$112Forty-day dry-aged, finished over oak. Carved tableside with rosemary salt and a wedge of lemon, which is not a garnish.

Three small things at the end. None of them are difficult; all of them are made here.
